Happy Sunday! This blogger uses Sundays to plan and prepare for the upcoming week. I have been asked so many times about the resources that help me plan a full week that I decided to launch the “Planning the Week” feature with three concomitant components: a recommended book to make your commute easier; a healthy recipe to make your week tastier and healthier; and a planning/planner tip to keep it all running smoothly.

A healthy slow cooker recipe? Count me in. I often feel that a slow cooker is one of the vital kitchen gadgets that a busy family (of one, two, or more) needs to have in order to create tasty and healthy dishes that take relatively little effort. Blogger Rebecca’s Slow Cooker Applesauce Chicken is just that. While the combination might seem strange to some, others will begin salivating at the mere thought of a sweet and savory combination like this one. It requires two ingredients and four spices that are thrown together into the slow cooker which does the rest of the job with you (seven hours of work I get the credit for? Yes, please.) Can be eaten hot on a bed of quinoa, pasta, or rice, or, when cold, with lettuce and cucumber and a dash of almonds for a tasty chicken salad. Enjoy!
