I have been asked so many times about the resources that help me plan a full week that I decided to launch the “Planning the Week” feature with three concomitant components: a recommended book to make your commute easier; a healthy recipe to make your week tastier and healthier; and a planning/planner tip to keep it all running smoothly.

I seem to have developed a slight obsession with Valentina’s baking website, The Baking Fairy. I know I keep saying that this feature is about helping find healthy recipes to items that can be used throughout the work week. I know I have been failing at that but guys, I’m pregnant. Can I get a break?
I’m assuming you are all lovely people who said immediately that yes, I can get a break, so I thank you for that. And if you didn’t say yes, this is for you:
For those of you who are kind enough to give me a break—all others, you can just stop reading now, meanies—I still wanted to be a little bit healthier and practical this week than I have been lately. One thing I love are morning loaves—instead of just toast, having a slice of banana bread or a vanilla loaf just sets me up for an even brighter day than anticipated. I also love loaves that feature zucchinis as a key ingredient—there is a moist factor that zucchinis add that can’t be beaten.
Valentina’s Honey and Greek Yogurt Zucchini Bread hits a number of spots when it comes to starting the day right. It’s moist, just sweet enough, and while tasty as can be, neutral enough that you can add a little something on top that you might be craving that morning (Nutella, much?) It also freezes well so if you make two loaves, you’ll have breakfast and snacks for a week, if not more.
