Happy Sunday! I use Sundays to plan and prepare for the upcoming week. I have been asked so many times about the resources that help me plan a full week that I decided to launch the “Planning the Week” feature with three concomitant components: a recommended book to make your commute easier; a healthy recipe to make your week tastier and healthier; and a planning/planner tip to keep it all running smoothly.

I am going to sound either slightly creepy or lazy, but I don’t see why I would look much further than on Valentina’s website, The Baking Fairy, for recipes to try out as part of my week’s planning. At least, as promised last week, I have been leaning towards healthier recipes instead of just making tray after tray of chocolatey goodness.
Gosh I miss those days.
Aaaaanyhow! This week’s recommended recipe is really just about the first few days, as I have yet to find a way of keeping my salads from becoming overwhelmingly mushy after three days. But it’s so delicious that I have it for both lunch and dinner on Mondays and Tuesdays, giving me time on Tuesday to prepare another batch for the rest of the week–or to prepare a batch of something else for those of you who can’t stand eating the same thing more than 1-2 days in a row (you and I both know who you are…) Use a Mason jar to carry this to work and you make your life even easier–the glass is easier to keep clean and a Mason jar, although heavier, is easier to lug around than a big plastic container.
