I have been asked so many times about the resources that help me plan a full week that I decided to launch the “Planning the Week” feature with three concomitant components: a recommended book to make your commute easier; a healthy recipe to make your week tastier and healthier; and a planning/planner tip to keep it all running smoothly.

While this winter hasn’t been nearly as bad as last year’s, I feel that many around me (and myself) are going a little stir crazy waiting to shed the layers of mandatory clothing. And so it comes as no surprise that any recipe that even remotely evokes the memory of better weather shoots straight up my “TBT” (that is, to be tested) list.
I mean just look at it! It’s simple to make and delicious to eat, and to boot evokes the feeling of spending hours on a terrace in the summer with a nice, ice-cold fruit smoothie, and either a friend or a book (or both, one after the other–why choose?)
And while those of you who are working on shedding the winter weight that invariably seems to pile on every single year, let’s be honest: this club sandwich does have some redeeming features nutrition wise and will probably go a long way with regards to emotional health.
